Once coeliac disease is diagnosed, treatment is a strict lifelong gluten-free diet (avoid wheat, rye, barley), with iron and vitamin (folate) supplementation for the deficiency anaemia. Endoscopy with small-bowel biopsy is the confirmatory diagnostic test, not the management of an established diagnosis; a fat-free diet is not the treatment.
